I confess a certain fondness for rankings, if only because they justify the hours I spend eating smoked meat in traffic. Salem’s barbecue sprawls from the polished, beer-sipping comfort of SOB Brewery Smokehouse to the pint-sized perfection of The Easy Otter’s spicy fried chicken, and that is before you mention the burnt ends at THE BACK PORCH.

I have judged brisket by its moisture, ribs by their smoke ring, and hush puppies by their crunch, all within a ten-mile radius of the Capitol. The list below spares you the indigestion.

Proceed accordingly.

Atmosphere beats the barbecue
Worth a local visit only
Brisket shines despite dryness
Great vibe, average meat
Try the Meat Shooter platter

I confess to a certain fondness for places where the atmosphere outshines the food, and Willamette Valley Smokehouse is precisely such a spot. The barbecue itself is competent, though my brisket arrived with a dryness that no amount of sauce could fully rescue. Yet the smoky flavor penetrated admirably, and the Meat Shooter platter is a delightful, gluttonous adventure. The vibe is genuinely charming, a place you might visit for the company and the setting, with the meat as a pleasant afterthought. It is worth a local visit, certainly, but I would not cross town for it. The search continues.

Smoke penetrates to bone
Masterful low-and-slow craft
Ribs melt with savory mac
Disciplined smoking process
Warm, generous hospitality

Whuttles BBQ is a masterclass in patience, and I mean that as the highest compliment. The smoke penetrates all the way to the bone, a feat that requires a disciplined low-and-slow process that far too many pitmasters abandon for speed. My ribs practically melted, each bite a savory union with the accompanying mac and cheese, which was itself creamy and comforting. The hospitality was warm, almost familial, and I left feeling less like a customer and more like a well-fed guest. This is craft, pure and simple. It is the standard by which I now judge others.

Salmon salad, surprisingly superb
Reasonable prices, generous portions
Friendly service, welcoming atmosphere

One does not typically visit a roadhouse for the salmon, and yet here we are. Best Little Roadhouse surprised me with a salmon salad of such superior quality that I momentarily forgot I was there for barbecue. The prices are reasonable, the portions generous, and the service friendly enough to make you feel like a regular on your first visit. The atmosphere is welcoming, a comfortable sort of place. I cannot in good conscience rank it among the barbecue elite, but for a reliable, pleasant meal at a fair price, it holds its own. My search for the best brisket, however, continued unabated.

Best ribs in Salem
Generous smoked meat portions
Perfectly smoked brisket
Friendly neighborhood service
Delicious sides and beans

RIVERWEST Smoke House has earned my loyalty with the best ribs I have found in Salem. They are not merely good; they are exemplary, with a perfect smoke ring and a tenderness that borders on the obscene. The brisket, too, is remarkably well-executed, and the portions of smoked meat are almost embarrassingly generous. The sides, particularly the beans, are delicious, and the service carries that friendly, neighborhood warmth that makes you want to return. It is a no-frills establishment, but the food speaks with a confidence that needs no decoration. I departed with a full stomach and a happy heart.

Worth the wait
Perfectly cooked potato salad
Fall-off-the-bone ribs
Tender, juicy brisket
Flavorful hush puppies

I waited forty minutes for my order at Roger That BBQ, and I would do it again without complaint. The wait, it turns out, is part of the charm, a promise that your food is being tended to with care. The ribs fell off the bone with a gentle nudge, and the brisket was tender and juicy, a textbook example of the craft. The potato salad was a revelation, perfectly cooked and seasoned with a restraint that allowed the potato to shine. The hush puppies were flavorful, crispy on the outside and soft within. This is food worth waiting for, and that is the highest praise I can offer.

Best BBQ in Salem
Signature crispy burnt ends
Creamy, smoky mac combinations
Fun, nerdy, welcoming atmosphere
Owner personally guides menu

I have found it. THE BACK PORCH is, in my humble and admittedly voracious opinion, the best barbecue in Salem. The signature crispy burnt ends are a study in texture, a caramelized exterior giving way to a rich, smoky interior. The mac and cheese, when combined with those ends, becomes a creamy, smoky symphony. The owner personally guided me through the menu, a gesture of hospitality that felt both genuine and nerdy in the best possible way. The atmosphere is fun and welcoming, a place where you can linger. I am not ashamed to admit I have already planned my next visit.

SOB Brewery Smokehouse is the kind of place you might stumble upon by accident and then tell everyone you know about. The brisket is outstanding, and the tacos, a creative twist on tradition, are a testament to a kitchen that is not afraid to play. The fresh draft beer selection pairs beautifully with the smoky flavors, and the customer service is excellent. The seating is spacious and comfortable, perfect for lingering over a meal and a pint. I would happily make a vacation stop here, which is saying something, as I am generally a man of fixed routines. This is a welcome disruption.

Miller’s BBQ Cafe offers a brisket that melts in your mouth, a quality that sounds like hyperbole until you experience it yourself. The portions are generous and hearty, the kind of meal that makes you want to loosen your belt and take a nap. The mac and cheese is fresh and creamy, and the service is friendly and attentive. Curiously, the coffee is excellent, a welcome companion to the rich, smoky barbecue. It is a comfortable, unpretentious spot that does not seek to impress with theatrics, but rather with simple, well-executed food. I left feeling thoroughly satisfied, a rare and precious thing.

Adam's Rib Smoke House is a place of playful Southern charm, and the beef ribs are, quite simply, on point. They are smoky, meaty, and cooked with a confidence that suggests a pitmaster who knows exactly what they are doing. The seven sauces, all of which I sampled with the diligence of a man on a mission, are uniformly good, each offering a different personality. The beer arrives in mason jars, a touch of whimsy that I appreciated more than I expected. This is a Southern twist perfected, a place that honors tradition while adding its own signature. I was charmed, and I was fed well.

Quick, gracious counter service
Distinctive spicy fried chicken
Small, intimate dining room

The Easy Otter, though not strictly a barbecue joint, deserves a mention for its exceptional chicken and waffles. The fried chicken has a distinctive, spicy kick that is both bold and balanced, and the waffles are a perfect, crisp counterpart. The beignets, fresh and seasonal, were a delightful surprise, light and airy. The counter service was quick and gracious, and the small, intimate dining room creates a cozy, personal atmosphere. It is a different kind of smoke, but it is no less satisfying. For a change of pace from the ribs and brisket, this is a charming detour.

Lively local favorite atmosphere

KKOKI BBQ SALEM is a lively, local favorite that serves as a great introduction for those new to Korean barbecue. The meat portions are generous, arriving at the table with a flourish, and our waiter, Oscar, was friendly and attentive, guiding us through the process with patience and good humor. The atmosphere is energetic, a place filled with the happy chatter of regulars. It is not the smoked barbecue of the American South, but it is a barbecue tradition all its own, and it is executed with skill. I left with a newfound appreciation for the genre and a very full stomach.

Rich smoky flavor profile
Perfectly textured jalapeño rice
Velvety cheesy mashed potatoes

Cindy Lou's BBQ & Catering is a place where the brisket melts in your mouth, a quality I have encountered only a handful of times in my extensive and often regrettable quest for smoked meat. The pit master himself was friendly, a man clearly proud of his craft, and the smoky flavor profile was rich and deep, lingering pleasantly. The jalapeño rice had a perfect texture and a gentle heat, and the cheesy mashed potatoes were velvety and indulgent. This is comfort food elevated to an art form. I am not sure what I did to deserve this meal, but I am grateful for it.
