I walked into Cooking with Company Pdx expecting to mess up dinner. I did, but only a little, and that was the point. The chef instructor is so knowledgeable and passionate that they make you feel like a genius even when you're staring at a pan of burning garlic. Class sizes are small, so you actually get attention. The recipes are fun, approachable, and honestly delicious. Challenging dishes get broken down into steps that suddenly feel easy. I left with a full belly and a bruised ego, but the ego part was my own fault. Highly recommend for anyone who wants to cook without crying.

Hipcooks is the class I keep coming back to, and I'm not even a Thai food snob. Monika is an engaging teacher who makes you laugh while you're chopping lemongrass. Every time I've attended, I learn a new tip that I immediately forget the next day, but that's on me. The setting is relaxed and inviting, so you never feel judged for your sad knife skills. The food we made was so good that I actually recreated it at home, which is a miracle. Worth returning for, absolutely. Just don't tell my other favorite spots.

The chefs are patient and give great guidance, even when I accidentally added salt twice. The space is roomy yet homey, which is a rare combo. It's a fun date night spot, and I can confirm it's better than the movies because you get to eat your mistakes. Step-by-step explanations make everything clear, and the owners go the extra mile. Tod and Maxine McClaskey Culinary Institute is a secret weapon for anyone who loves food but hates pretension. It's a student-run restaurant, so you get incredible value for a fraction of the price. I checked their Instagram for the weekly menu, and I'm still thinking about the adventurous, cultural specials they made. The student chef creations are exceptional, and the service is warm, professional, and kind. I felt like I was being served by future stars. Steelport Knife Co. isn't a cooking school in the traditional sense, but it's a mandatory stop for anyone who cares about knives. The founder personally tours the factory, and his passion is contagious. I touched a knife and felt like I could chop through a mountain. The craftsmanship is unreal, and these are the finest kitchen knives I've ever held. It's a perfect Portland afternoon spot, especially if you're a nerd for steel. The family welcome is warm, and you leave with a dream knife in your mind. My wallet thanked me for not buying one. Barely.

I ignored real life for two hours and just painted while sipping a perfectly roasted latte.
